Deep Fried Choco-Caramel Bites
What you need:
2 total size chocolate-covered, caramel/nougat-filled candy bars (such as Snickers), chilled
2 cups milk
2 cups all-purpose flour
1 cup corn flour
1 cup vegetable oil
1/8 teaspoon baking soda
In a shallow bowl, combine all-purpose flour, corn flour and baking soda then carefully add milk to create a thin batter. The batter should still have the ability to stick to the candy bars and not drip off. Dip candy bars in the batter to coat then deep fry for two to three minutes or till golden brown. Allow to cool for at least 10 minutes before slicing into bit-size pieces.
What you need:
1 package frozen prepared pie crusts, thawed and cut into 6 4-inch squares
1 1/2 cups dried apricots
1/2 cup white sugar
1/2 cup vegetable oil
1 tablespoon butter
1 tbsp confectioner’s sugar
1/2 teaspoon ground cinnamon
Put apricot in a saucepan then add just enough water to cover. Bring to a boil then lower heat and simmer until apricots are tender, about half an hour. Reserve tablespoons of the liquid and discard the remainder. Place apricot and reserved liquid in a blender and pulse until smooth. Add in white sugar, butter and cinnamon and pulse again until all ingredients are well-blended. Place 1 tablespoon of apricot mixture in each pie crust square and fold each in half diagonally. Press edges with a fork to seal. Heat oil over medium-high heat in a large pan and cook triangles until golden brown, 2-3 minutes per side. Transfer to serving plate and sprinkle with confectioner’s sugar before serving.
